Pasta with raw veggies: Italian crudaiola.

Ingredients

  • 500 g fresh pasta like orecchiette you can use any kind of pasta you like, fresh or dry. I think short pasta is better.
  • 150 g grated pecorino cheese
  • 200 g cherry tomatoes
  • 1 fresh red onion
  • basil leaves
  • thyme leaves
  • extra virgin olive oil
  • salt to taste

Instructions

  • Put a pan with salted water on the stove for boiling your pasta.
  • Put all the ingredients except pasta in a blender, beldn until very smooth, try it and add more of any of the ingredients/ salt to reach your perfect taste.
    You should end with a cremy, orange sauce.
  • Drain your pasta and toss in the sauce, mix well and serve with more pecorino cheese.

Notes

You can use grated Parmesan if you prefer.
