Hello again my friends!
I am here again, Christmast is fast approacing and while I’m writing this post I still don’t know if we will be allowed to spend it with our beloved ones or not.
For sure I know everyone deserves a warm, merry and joyful Christmas, this year more than ever.
This recipe is the cheapest you will probably will find in this Advent Calendar as it calls only for three ingredients: flour, egg yolks, sugar.
It’s a very old recipe from Ferrara, a beautiful city in the North of Italy.
Due to the fact it’s balanced on the eggs available in ancient times ( smaller than the ones we have today) the result may vary: you could end with a classic dough if you can find small eggs, a dough you can cut with a knife and then roll in your hand, giving the cookies a S shape or you could end with a batter you can put on the baking tray with a spoon.
Both ways you will end with delicious and very sweet soft cookies, they pair heavenly with a cup of dark, unsweetened coffee!
If you can do this recipe with yolks in brick.
If you can’t use yolks from eggs, save whites and do the meringues I am going to post tomorrow or a light frittata made with egg whites and a lot of veggies.

Here we are then, consider you can split the recipe’s quantities in half!
Three ingredients old fashioned cookies.
Ingredients
- 400 g all purpose flour
- 500 g sugar
- 15 egg yolks
- 1 lemon ( optional)
- 1 pinch salt
Instructions
- Beat egg yolks and sugar until yellow and fluffy.Add sifted flour mixing slowly, then add zest from one lemon and a pinch of salt.
- Put the dough as written above on baking tray lined with parchment.Bake at 320°F for 10.15 minutes, they should stay yellowish rather than gold/brown.
